Cartoccio is a project born in Beijing in the winter of 2015. It aims to share and elevate the southern Italian cuisine tradition. Literally cartoccio means “paper cone”, which was the main serving “flatware” in Italy right after the II World War, when house kitchens were very rare, and food was chiefly available in the streets. Nonetheless, the food goodness still played a major role, as the “cartoccio” helped to restore its huge tradition.
